Holiday Recipes

One thing I love about the holiday season and all the delicious food but I am so over it now!! Here are a couple favorites that we made this year!

Bedhay (perogies) (makes around 30)

Dough

2 cups flour
1/2 tsp salt
2 eggs
1/2 cup cold water

Mix ingredients to a consistency that isn't too sticky. Keep covered/cooled when not in use.

Filling

5 large potatoes
1 tsp salt
1 lbs cottage cheese
1 large onion, finely chopped

boil, rice and mix potatoes and add other ingredients until they are well mixed.

Roll out dough and cut into approximately 3 inch round shapes. Fill with potato mixture and fold dough over. Seal edges with slightly damp finger. Place in boiling water for about 5 minutes, when they rise to  top remove with slotted spoon and butter each side.

You can freeze at this point, 1 layer in a baggie. When ready to eat fry up in a pan until each side is crispy and lightly browned, top with sour cream!

Everytime  I made this (which was about 4 times at different parties) I had several people ask me for the recipe. It's a weird combo of ingredients but awesome!!
